Date Pinwheel cookie #recipe

In Hyacinth has a lot of cooking going on what with the heroines cooking courting meals and the families sitting down over meals to discuss their day, so with the holidays coming, I thought I would share some of my favorite recipes.

So, my plan is every Friday to offer up one of my families' favorite recipes through the end of the year. From our kitchen to yours.

This week, I'm giving you Date Pinwheel cookies.

Date Pinwheels

Soft ingredients:
¾ c butter
½ c white sugar
1 c packed brown sugar
2 eggs
1 ½ tsp vanilla extract

Dry Ingredients:
1 ½ tsp baking powder
1 pinch salt
¼ tsp baking soda
3 ½ c all-purpose flour

Ingredients for Date Mix:
1 ½ c pitted dates
¼ c white sugar
¾ tsp salt
1 ¼ c water
2/3 c finely chopped walnuts

Sift together flour, baking powder, baking soda, and salt twice to make sure there are no lumps.

Cream together butter and both sugars until light and fluffy. Beat eggs until thick and add to creamed mixture 1 egg at a time, beating well after each addition. Stir in vanilla.

Stir dry ingredients into creamed mixture about 1/4 at a time. Combine thoroughly after each addition. Place dough in plastic wrap and chill until firm.

Chop pitted dates. Place dates into small saucepan and add sugar, salt, and water. Cook, stirring constantly until mixture is soft and gooey. Remove from heat. Add chopped nuts. Mix well and set aside to cool.

Divide dough into 3 parts. Roll out 1 part at a time into a rectangle. Spread with date filling. Roll up jelly roll fashion in waxed paper. Chill several hours. (Or freeze if you want to make the cookies at a later time - if you freeze, thaw completely before cutting)

Preheat oven to 350ᵒF

With sharp knife, slice ¼” thick slices off of rolls and place on greased cookie sheets. Bake 10 - 13    minutes. Let cool.
