Who loves chocolate? Okay, that was a silly question - though as I know someone who can't stand it, it isn't all out of the realm of possibility that someone else doesn't like it either.
But, for the rest of us chocolate addicts, I have a simple, luscious homemade chocolate cupcake recipe for you. Hint: you don't even need icing. Yes, they're that good.
1 ½ c all-purpose lour
¾ c granulated sugar
¼ c light brown sugar
¼ c baking cocoa (Try to go for dutch processed. You want the high fat content.)
1 t baking soda
½ t salt
½ t cinnamon
1 c water
½ c cooking oil
1 T rice vinegar (Don't use regular white vinegar unless you want to taste it.)
1½ t vanilla
In small bowl, double-sift flour, brown and granulated sugars, cocoa, baking soda, salt, and cinnamon together. Set aside.
In a medium mixing bowl, beat water, oil, rice vinegar, & vanilla. Add in dry mixture a few spoonfuls at a time and beat until well blended.
Fill cupcake holders 1/2-2/3 full with cocoa mixture.
Bake in preheated 350 degree oven for 30-35 minutes or until toothpick comes out clean.
